Living our lives on a mission is all about knowing and glorifying God, serving others, and living our lives, well, on a mission to make the most of Him! 

For me, that includes what and how I eat, and often who I eat with. The table is a place for community. Maybe you need a little "me" time. Make yourself a delicious meal and sit-down without the TV!  Feed your family, your friends, your neighbors.

I want to treat this body God gave me with respect. One of the ways I look to do that is through food. Trust me, this is not always the case (french fries are my weakness!.. ok food in general, especially the kind that comes from restaurants, is my weakness) but when I focus on putting good things in, I feel so much better and have more energy to pour myself out to others.

So, what's on the menu today?  One of my absolute favorites: CHICKEN STIR-FRY. I make this meal ALL.THE.TIME.  It takes one pan (who doesn't love only washing one dish?) and is done in about 15-20 minutes.

Serves 2

Boneless skinless chicken tenderloins (about 6), cut into bite size pieces
1 white onion, cut into petals
1 bag of your favorite stir-fry medley (I find mine in the produce section of the grocery store)
        OR a mix of fresh broccoli, carrots, and snap peas
Extra Virgin Coconut Oil
Braggs Amino Acids

Optional: Brown Rice, Yum Yum Sauce (I love to put a little Yum Yum in a side dish for light dipping)

1. Heat 1 TBLS EVCO in a large fry pan. Once the oil is melted, add onion. Let soften for a few minutes.

2. Add veggies and sauté for about 5 minutes.

3. Add chicken directly into the veggies (or in a separate pan with coconut oil) and sauté until chicken is cooked through and veggies are cooked but still a bit crisp. Stir regularly.

4. Add 1 tsp of Braggs Amino Acid to the stir-fry. Mix and cook another minute. Remove from heat and enjoy!
